Traditional Recipes: a plunge into history

Our recipes tell the story of our region and its inhabitants, and each dish is prepared with the utmost attention to detail. One of the most representative dishes of our culinary offer is ‘Spaghetto alla Busara’, a recipe that dates back to Venetian fishermen.

Spaghetti alla Busara: a Classic of Tradition

Spaghetti alla Busara’ is a dish that combines simplicity and flavour in a perfect balance. Here’s how to prepare it:

Ingredients:

  • Spaghetti: 350 g
  • Garlic: 2 cloves
  • Fresh langoustines: 16
  • Auburn tomatoes: 4
  • Peeled tomatoes: 150 g
  • White wine: 1 dl
  • Salt: 2 g
  • Mustard: 2 g
  • Extra virgin olive oil: 80 g
  • Black pepper: a pinch
  • Chopped fresh parsley: 20 g

Preparation:

  1. Brown the chopped garlic in olive oil, then add the langoustines and salt lightly. Cook for about 5 minutes, then drain and set aside.
  2. Add the liquid from the langoustines to the wine and fade over a high heat, then add the diced tomatoes and peeled tomatoes. Salt moderately and simmer for about 20 minutes.
  3. Dilute the sauce with a little water and add the scampi. Cook for another 5 minutes.
  4. Cook the spaghetti for 8 minutes, then season with the sauce, black pepper, parsley and a pinch of chilli. Serve piping hot.

Anecdotes and Historical Notes: The name ‘Busara’ has unclear origins. For some, it means ‘deception’ because fishermen used to cook the scraps of scampi with tomatoes and wine, passing the dish off as a delicious crustacean soup. For others, the name comes from the earthenware vessel used on ships for cooking, called ‘busara’.
